It's quick and it's easy - which makes it just ideal before the big day!
DAY 22
Mixed vegetables (pie or dish)
- 2 large potatoes, grated
- 1 small sweet potato (kumara) grated
- 1 to 2 carrots, grated
- 1 stick of celery, finely sliced
- 1 zucchini, grated
- 200g can of corn kernels
- 1 onion
- 2 rashers of bacon, chopped
- ½ cup of grated cheese
- ½ cup self-raising flour
- 2 tablespoons of oil
- 2 eggs, lightly beaten
Method:
►Mix all ingredients together and bake in a greased quiche dish for 40 minutes till brown on top.
